Spore
Spore is a game currently in development. They show you a nice little flash video which gives you an introduction into the gameplay. Basically, you start off as a small microrganism and evolve. Not only do you evolve into a complex organism, but you make a settlement of sorts and eventually take over the planet you are on. From there, you branch out into the solar system and the cosmos. It is due at the end of 2006, but most games don't hit their intended mark of due dates.
